I applaud you for the way that these DVD's and books are layed out. You have made it very easy for us to learn about fish cleaning and the best ways to bone out a fillet. I never realized there are that many scaling methods to choose from when scaling fish and filleting. I just wanted to drop you a line and say thanks for sharing with us your vast knowledge on scaling, gutting and fish filleting plus the great information on shellfish and crustaceans. We tend to cook more with crustaceans rather than fish, hence I really loved the dvd on preparing and cleaning crustaceans. My son in law catches fish from time to time and I'm going to show him the filleting dvd - he'll be able to cut his own fillets which will impress the wife...

Anyway thanks again as it's refreshing to be really happy after buying a seafood package online and getting great value for money.

I must say that these dvd's and books are just wonderful. Your fish filleting skills are second to none and the scaling method on the boat is so simple but absolutely brilliant. I've been showing the local lads your package and how you have made me want to buy more seafood since I now know what to look for when down at the markets. I really like your ways on cleaning crustaceans at home without making mess everywhere and its very rewarding to see much more flesh staying in my fillets now.
